Ingredients for Roasted Potatoes:

2lbs Gold or Russet Potatoes

1 Tablespoon of Olive Oil

Epis Roasted Potato Seasoning

Salt to taste

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Slice the potatoes with a chef knife or vegetable slicer and place in a baking dish.
  3. Add the olive oil, salt  and sprinkle Epis Roasted Potato.
  4. Toss until potatoes are well coated. 
  5. Roast in the oven for 45 minutes to 1 hour or until browned and fork tender.
  6. Remove the potatoes from the oven and serve hot with sea scallops.

1 ½ lbs of Sea Scallops

1 Tablespoon Olive Oil

Juice of ½ lime or lemon

1 Tablespoon of Epis Seafood Seasoning

1 Medium Yellow Bell Pepper Sliced

1 Medium Orange Bell Pepper Sliced

1 Medium Onion Sliced

1 Cup Cherry Tomatoes

Directions:

  1. Rinse the sea scallops under cold running water to remove any remaining sand.
  2. Add scallops into a bowl, then add lime or lemon juice.
  3. Into a large stainless-steel skillet add the olive oil, then sprinkle the Epis Seafood seasoning until skillet is evenly coated. 
  4. Heat skillet over medium heat and cook the sea scallops undisturbed until they are coated, about 1 minute. Flip the scallops and cook for 1 minute more.
